Thai Style Black Bean Croquettes



This is my version of the croquette recipe that needed to be saved, from the contest at http://www.blog.fatfreevegan.com/. I decided to use black beans, removed the soy sauce and replaced it with 1/4 teaspoon salt and 1 tablespoon lime juice instead. I also added a pinch of cayenne pepper for spice. I'm not sure if they're still "Thai" so I call them "Thai style."

Thai Style Black Bean Croquettes

12 ounces green beans, trimmed and sliced
1 cup fresh basil leaves
1 can black beans (about 15 ounces), rinsed and drained
1 tablespoon red curry paste
1 tablespoon grated lime zest
1 tablespoon lime juice
1 teaspoon brown sugar
1/4 teaspoon freshly ground black pepper
1/4 teaspoon kosher salt
1 pinch cayenne pepper
1 tablespoon ground flax seed
1/2 cup vital wheat gluten

Place the green beans, basil, and black beans into a food processor and pulse to chop coarsely (do not puree!) If you have a small processor, you may have to do this in batches. Pour into a bowl and add all remaining ingredients. Stir well for about 3 minutes, to allow gluten to develop. Set aside while you preheat the oven to 425F.

Spray a non-stick baking sheet with oil. Take a heaping tablespoon of the batter and form it into a patty about 1 1/2-inches (4 cm) across and 1/2-inch (1.25 cm) thick. Place it on the baking sheet and repeat with the rest of the batter. It should make about 30 croquettes.

Bake for 20 minutes, and then turn over and bake until browned, about 15-20 minutes. Serve warm with dipping sauce.

I actually got the idea to use black beans from that really good recipe I made of yours, the black bean burgers.

Ah, you've exposed one of my food prejudices. When I think of white beans, I think Italian cuisine, and when I think of black beans, I think Southwestern. I don't have any bean associations to Thai food, so I was at a loss. I need to get over these crazy regional ideas and start thinking globally! :-)

Heh. I was just trying to think of what kind of bean would taste the best with basil. And then I remembered a dish I once had with black beans and basil and then I remembered those black bean burgers and it just made sense!

Black beans go with everything. I eat a lot of them.
I'll have to give this a whirl sometime. :) Looks good! :D
